For the Salad
1 Cup Dry Quinoa
2 Cups Water
1/2 Small Bell Pepper (Finely Diced)
1/4 Red Onion (Finely Diced)
1/2 Cup Flaked Coconut
1/2 Cup Almonds (Chopped)
1 Cup Edamame
1/2 Cup Fresh Cilantro (Chopped)
1 Cup Sprouts
For the Dressing
2 TBSP Balsamic Vinegar
1 TBSP Olive Oil
2 Limes (Juiced)
1 1/2 TBSP Maple Syrup
Pinch of Salt
Pinch of Ground Black Pepper
Cook the quinoa according to package instructions.
Place the dressing ingredients into a mason jar and shake vigorously.
In a large glass bowl, toss remaining ingredients, add the cooled quinoa on top and pour dressing over.
Season with salt and pepper to taste and toss to mix well.
