1/2 Cup Balsamic Vinegar
8 Oz Fresh Mozzarella (Diced)
2 TBSP Fresh Basil (Chopped)
2 Cups Cherry Tomatoes (Diced)
8 Slices Italian Bread (Toasted)
2 TBSP Olive Oil
In a small saucepan over medium-low heat, add the balsamic vinegar and heat until it comes to a slow boil, reduce to low and allow to simmer for 10 minutes or until the balsamic vinegar reduces by about a half.
Remove from heat and transfer to a small glass bowl to cool.
In a medium glass bowl, add the mozzarella, tomatoes, basil, salt and pepper and mix to combine evenly.
Take each slice of toasted bread and brush one side with a little olive oil, top with the mozzarella and tomato mixture, drizzle with a little of the balsamic glaze and serve immediately.
