1/2 Cup Pancetta (Finely Chopped)
1/2 Cup Parmesan Cheese (Grated)
4 Large Eggs
2 Cloves of Garlic (Peeled & Crushed)
1 TBSP Butter (Unsalted)
Pinch of Salt
Pinch of Ground Black Pepper
1 LB Cooked Pasta (plus 1/2 Cup Pasta Water)
In a large pan over medium-high heat, cook the chopped pancetta with the 2 cloves of garlic until pancetta is nicely browned and the fat is rendered then, remove and discard the garlic.
In a small glass bowl, mix 1 whole egg and 3 egg yolks and the freshly grated parmesan until combined.
At this point add the cooked pasta to the pancetta as well as 1/4 cup of reserved pasta water, stir to allow the pasta to get coated with the sauce then remove from the heat.
Pour the egg and parmesan mixture into the pasta and toss quickly so the egg does not curdle, season with salt and pepper, add more grated parmesan and additional pasta water if required and serve.
