2 LBS Flank or Skirt Steak
1/3 Cup Olive Oil
1/4 Cup Fresh Lime Juice
1/4 Cup Fresh Orange Juice
3 TBSP Apple Cider Vinegar
1 TSP Honey
1/2 Cup Red Onion (Chopped)
1/4 Cup Fresh Cilantro (Chopped)
4 Cloves of Garlic (Minced)
1 Jalapeno (Minced)
1 TSP Ground Cumin
1 TSP Chili Powder
1 TSP Ground Paprika
Pinch of Salt
Pinch of Ground Black Pepper
In a medium glass bowl, stir together the olive oil, lime juice, orange juice, apple cider vinegar, honey, red onion cilantro garlic, jalapeno, chili powder, cumin, paprika and season with salt and pepper.
Place the flank or skirt steak into a large baking dish and pour over the steak marinade.
Cover with plastic wrap and all ow to marinade in the refrigerator for 4 hours, turning halfway through to coat both sides of the steak evenly.
Brush a grill lightly with a little olive oil and heat grill to a medium high heat.
Remove steak from the refrigerator and drain of excess marinade, season with salt and pepper and place onto the grill.
Cook steak for about 5-7 minutes per side, or until required doneness is reached.
Transfer steak to a serving place, cover with aluminum foil and allow to rest for 5 minutes.
Once rested, slice steak into strips and serve over warm tortillas with your choice of additional toppings and sides.
