3 LBS Boneless Pork Shoulder
3/4 Cups Low-Sodium Chicken Broth
3/4 Cups Fresh Orange Juice
3 TBSP Lime Juice
2 TSP Salt
1 TSP Ground Black Pepper
2 TSP Ground Cumin
2 TSP Dried Oregano
1 TSP Ground Coriander
1 TSP Chili Powder
1/2 TSP Cayenne Pepper
1 Small Yellow Onion (Chopped)
6 Cloves of Garlic (Minced)
1 1/2 TBSP Olive Oil
Place the pork shoulder in the bowl of a slow cooker, pour in the chicken broth, orange and lime juice.
Sprinkle the pork and juice mixture with salt, pepper, cumin, oregano, coriander, chili powder, cayenne, onions and garlic.
Place lid on slow cooker and cook on a low heat for 8 hours.
After 8 hours, remove pork from the slow cooker, leaving liquid in the bowl and shred the pork using two forks
Spray a non-stick baking sheet with non-stick cooking spray or line with parchment paper.
Place shredded pork on baking sheet and pour over 1 cup of the slow cooker liquid, drizzle with a little olive oil and spread mixture into an even layer on the baking sheet.
Preheat broiler to high.
Place baking sheet on top shelf of oven and broil until pork begins to turn golden brown and crispy, about 4-5 minutes.
Remove from oven and serve over warmed tortillas with your choice of toppings.
