1 LB Skinless Halibut Fillet (Deboned & Chopped).
1 Cup Potato (Peeled & Grated).
1 Cup Mayonnaise.
1 TBSP All Purpose Flour.
1 TSP Mixed Herbs.
Pinch of Salt.
Pinch of Ground Black Pepper.
In a medium glass bowl, add the grated potato, chopped halibut and flour and mix
lightly to combine.
Season with salt and pepper and lightly mix again.
Using your hands, form 12 flat patties out of the potato and fish mixture.
In a heavy-bottomed skillet over medium high heat, add some olive oil.
Once the oil begins to shimmer, add 4 of the fish patties and cook for 2-3
minutes per side until golden brown.
Once the first 4 patties are done, transfer to a kitchen paper lined plate to
drain while you cook the remaining patties, transfering them to the paper lined
plate after each batch.
In a small glass bowl, add the mayonnaise and herbs, mix well.
Serve the fish cakes with the herbed mayonnaise.
