2 salmon fillets
2 cups of mixed salad greens
1 ripe avocado, sliced
1 lemon
2 tablespoons of extra virgin olive oil
1 tablespoon of Dijon mustard
Salt and pepper to taste
Preheat the oven to 400°F (200°C).
Season the salmon fillets with salt and pepper and place them on a baking sheet.
Bake the salmon for 12-15 minutes until it is cooked through.
While the salmon is baking, prepare the dressing by combining the juice of half a lemon, olive oil, Dijon mustard, salt, and pepper in a small bowl. Whisk until well combined.
In a large salad bowl, combine the mixed greens and avocado slices.
Once the salmon is cooked, let it cool for a few minutes, then flake it into bite-sized pieces.
Add the salmon to the salad bowl and drizzle the lemon-Dijon dressing over the top.
Toss gently to combine, ensuring the dressing coats the salad evenly.
Squeeze the remaining lemon half over the salad just before serving.
