4 pounds of rib roast
4 tablespoons of grass-fed butter, softened
2 garlic cloves, minced
2 tablespoons of fresh rosemary, chopped
Salt and pepper to taste
1 pound of asparagus
2 tablespoons of olive oil
Preheat the oven to 450°F (230°C).
In a small bowl, combine the softened butter, minced garlic, chopped rosemary, salt, and pepper. Mix well to form a herb butter.
Season the rib roast generously with salt and pepper on all sides.
Place the rib roast on a rack in a roasting pan.
Spread the herb butter mixture evenly over the top of the rib roast.
Roast the rib roast in the preheated oven for 20 minutes, then reduce the heat to 350°F (175°C) and continue cooking for approximately 1 hour and 30 minutes, or until the internal temperature reaches your desired level of doneness.
While the rib roast is cooking, prepare the asparagus by trimming the woody ends and tossing them with olive oil, salt, and pepper.
Arrange the asparagus on a baking sheet and roast in the oven for 10-15 minutes, or until they are tender and slightly charred.
Remove the rib roast from the oven and let it rest for 15-20 minutes before slicing.
Serve the rib roast with the roasted asparagus on the side.
