Quinoa and Chickpea Salad with Lemon-Herb Dressing Recipe.


Ingredients:


1 cup of cooked quinoa
1 cup of canned chickpeas, rinsed and drained
1 cup of diced cucumber
1 cup of cherry tomatoes, halved
1/4 cup of chopped fresh parsley
1/4 cup of chopped fresh mint
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
Salt and pepper to taste


Recipe Instructions:


In a large salad bowl, combine the cooked quinoa, chickpeas, diced cucumber, cherry tomatoes, parsley, and mint.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
Drizzle the dressing over the quinoa and chickpea salad and toss gently to coat all the ingredients.
Let the salad sit for 10-15 minutes to allow the flavors to meld together.
Serve the salad chilled or at room temperature.
