1 cup of rolled oats
1 scoop of your favorite protein powder
1 ripe banana, mashed
2 large eggs
1/2 cup of milk (dairy or plant-based)
1 teaspoon of vanilla extract
1 teaspoon of baking powder
1/2 teaspoon of cinnamon (optional)
Toppings: Fresh berries, sliced banana, nut butter, or Greek yogurt (optional)
In a blender or food processor, grind the rolled oats until they reach a flour-like consistency.
In a mixing bowl, combine the ground oats, protein powder, mashed banana, eggs, milk, vanilla extract, baking powder, and cinnamon (if desired). Mix well to form a smooth batter.
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of oil.
Pour 1/4 cup of the batter onto the skillet for each pancake and cook until bubbles form on the surface. Flip the pancakes and cook for another minute or until golden brown.
Repeat the process with the remaining batter.
Serve the protein pancakes with your favorite toppings, such as fresh berries, sliced banana, nut butter, or Greek yogurt.
