Quinoa Chicken Salad Bowl Recipe.


Ingredients:


1 cup of cooked quinoa
4 ounces of grilled chicken breast, sliced
1 cup of mixed greens
1/2 cup of cherry tomatoes, halved
1/4 cup of diced cucumber
1/4 cup of diced bell peppers (any color)
1/4 cup of sliced red onion
2 tablespoons of chopped fresh cilantro or parsley
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
Salt and pepper to taste


Recipe Instructions:


In a large bowl, combine the cooked quinoa, sliced grilled chicken breast, mixed greens, cherry tomatoes, cucumber, bell peppers, red onion, and fresh herbs.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
Drizzle the dressing over the quinoa chicken salad bowl and toss gently to coat all the ingredients.
Adjust the seasoning if needed.
Serve the salad chilled or at room temperature.
