4 ounces of grilled chicken breast, sliced
1 cup of cooked quinoa
1 cup of mixed salad greens
1/2 cup of cherry tomatoes, halved
1/4 cup of diced cucumber
1/4 cup of diced red onion
1/4 cup of chopped fresh cilantro or parsley
1/2 avocado, sliced
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
Salt and pepper to taste
In a large salad bowl, combine the sliced grilled chicken breast, cooked quinoa, mixed salad greens, cherry tomatoes, cucumber, red onion, and fresh herbs.
In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to create the dressing.
Drizzle the dressing over the quinoa salad and toss gently to coat all the ingredients.
Add the sliced avocado on top of the salad.
Adjust the seasoning if needed.
Serve the salad chilled or at room temperature.
