2 salmon fillets
1 tablespoon of olive oil
1 teaspoon of dried dill
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
2 cups of mixed vegetables (e.g., broccoli florets, carrots, bell peppers)
1 tablespoon of balsamic vinegar
1 cup of cooked brown rice
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
Drizzle the salmon with olive oil and sprinkle with dried dill, garlic powder, onion powder, salt, and pepper.
In a separate bowl, toss the mixed vegetables with olive oil, balsamic vinegar, salt, and pepper.
Spread the vegetables on another baking sheet.
Bake both the salmon and vegetables in the preheated oven for 12-15 minutes or until the salmon is cooked through and the vegetables are tender.
While the salmon and vegetables are baking, cook the brown rice according to the package instructions.
Serve the baked salmon alongside the roasted vegetables and brown rice.
