1 tablespoon of olive oil
1/2 cup of diced bell peppers (any color)
1/2 cup of diced zucchini
1/4 cup of diced onion
4 ounces of firm tofu, crumbled
1/4 teaspoon of turmeric powder
Salt and pepper to taste
2 slices of whole grain bread, toasted
Heat the olive oil in a non-stick skillet over medium heat.
Add the diced bell peppers, zucchini, and onion to the skillet. Sauté for 3-4 minutes until the vegetables are tender.
Crumble the firm tofu into the skillet and mix well with the vegetables.
Sprinkle turmeric powder, salt, and pepper over the tofu and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the tofu is heated through.
Serve the veggie and tofu scramble with toasted whole grain bread.
