For the salad:
1 cup of cooked quinoa
1 cup of canned black beans, rinsed and drained
1 cup of diced cucumber
1 cup of cherry tomatoes, halved
1/4 cup of diced red onion
1/4 cup of chopped fresh cilantro
Salt and pepper to taste
For the avocado-lime dressing:
1 ripe avocado
Juice of 1 lime
2 tablespoons of extra virgin olive oil
1 clove of garlic, minced
Salt and pepper to taste
In a large salad bowl, combine the cooked quinoa, black beans, cucumber, cherry tomatoes, red onion, and cilantro.
In a blender or food processor, blend together the avocado, lime juice, olive oil, minced garlic, salt, and pepper until smooth and creamy.
Pour the avocado-lime dressing over the quinoa and black bean salad, tossing gently to coat all the ingredients.
Season with additional salt and pepper if needed.
Serve the salad chilled or at room temperature.
