3 large eggs
2 slices of bacon, cooked and crumbled
1/4 cup of diced avocado
2 tablespoons of diced red onion
2 tablespoons of diced bell peppers (any color)
Salt and pepper to taste
1 tablespoon of butter or coconut oil
In a bowl, whisk the eggs until well beaten. Season with salt and pepper.
Heat the butter or coconut oil in a non-stick skillet over medium heat.
Add the diced red onion and bell peppers to the skillet, sautéing for 2-3 minutes until they begin to soften.
Pour the beaten eggs into the skillet, tilting it to ensure even distribution.
Cook the omelette for a few minutes until the edges start to set.
Sprinkle the crumbled bacon and diced avocado over one half of the omelette.
Carefully fold the other half of the omelette over the filling.
Cook for another minute or until the eggs are fully set and the filling is heated through.
Serve the avocado and bacon stuffed omelette with a side of fresh greens or sliced tomatoes.
