Greek Salad with Grilled Chicken Recipe.


Ingredients:


For the salad:

2 cups of mixed salad greens
1/2 cup of cucumber, sliced
1/2 cup of cherry tomatoes, halved
1/4 cup of sliced red onion
1/4 cup of sliced Kalamata olives
2 ounces of feta cheese, crumbled
For the grilled chicken:

4 ounces of chicken breast
1 tablespoon of olive oil
Juice of 1 lemon
1 teaspoon of dried oregano
Salt and pepper to taste
For the dressing:

2 tablespoons of extra virgin olive oil
1 tablespoon of red wine vinegar
1 clove of garlic, minced
Salt and pepper to taste


Recipe Instructions:


Preheat the grill to medium-high heat.
In a bowl, combine the olive oil, lemon juice, dried oregano, salt, and pepper for the grilled chicken marinade.
Place the chicken breast in the marinade and let it sit for 10-15 minutes.
Grill the chicken breast for about 6-8 minutes per side or until cooked through.
Let the chicken rest for a few minutes before slicing it into strips.
In a large salad bowl, combine the mixed salad greens, cucumber slices, cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese.
In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, salt, and pepper to create the dressing.
Drizzle the dressing over the salad and toss gently to coat.
Top the salad with the grilled chicken slices.
Serve the Greek salad with grilled chicken as a refreshing and satisfying lunch option.
