Spinach and Feta Egg Muffins Recipe.


Ingredients:


6 large eggs
1 cup of fresh spinach, chopped
1/2 cup of crumbled feta cheese
1/4 cup of diced red bell pepper
1/4 cup of diced red onion
1/4 teaspoon of garlic powder
Salt and pepper to taste
Cooking spray or olive oil for greasing


Recipe Instructions:


Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray or olive oil.
In a bowl, whisk the eggs until well beaten. Season with garlic powder, salt, and pepper.
Stir in the chopped spinach, crumbled feta cheese, diced red bell pepper, and red onion.
Divide the mixture evenly among the muffin cups, filling each one about two-thirds full.
Bake in the preheated oven for 15-18 minutes or until the egg muffins are set and slightly golden on top.
Let the egg muffins cool slightly before removing them from the muffin tin.
Enjoy these spinach and feta egg muffins for a quick and nutritious low-carb breakfast.
