2 large zucchini, spiralized or thinly sliced into noodles
1 cup of cherry tomatoes, halved
1/4 cup of fresh basil leaves
2 tablespoons of pine nuts
1 clove of garlic
1/4 cup of grated Parmesan cheese
1/4 cup of extra virgin olive oil
Salt and pepper to taste
In a food processor, combine the fresh basil, pine nuts, garlic, grated Parmesan cheese, and a pinch of salt and pepper.
Pulse the ingredients until finely chopped.
With the food processor running, slowly drizzle in the extra virgin olive oil until a smooth pesto sauce forms.
In a pan over medium heat, sauté the zucchini noodles for 2-3 minutes until they are just tender.
Toss the zucchini noodles with the pesto sauce and halved cherry tomatoes.
Season with additional salt and pepper if desired.
Serve the zucchini noodles with pesto and cherry tomatoes for a light and satisfying low-carb lunch.
