Baked Lemon Herb Salmon with Mediterranean Couscous Recipe.


Ingredients:


For the salmon:

2 salmon fillets
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
2 cloves of garlic, minced
1 tablespoon of fresh dill, chopped
Salt and pepper to taste
For the Mediterranean couscous:

1 cup of whole wheat couscous
1 1/2 cups of vegetable broth
1/4 cup of diced red bell pepper
1/4 cup of diced cucumber
1/4 cup of sliced Kalamata olives
2 tablespoons of chopped fresh parsley
2 tablespoons of chopped fresh mint
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
Salt and pepper to taste


Recipe Instructions:


Preheat the oven to 375°F (190°C).
In a baking dish, place the salmon fillets and squeeze the lemon juice over them.
Drizzle the extra virgin olive oil, minced garlic, and sprinkle the fresh dill, salt, and pepper over the salmon.
Bake the salmon in the preheated oven for 12-15 minutes or until it is cooked through and flakes easily with a fork.
While the salmon is baking, prepare the couscous according to the package instructions, using vegetable broth instead of water for added flavor.
Once the couscous is cooked, fluff it with a fork and let it cool slightly.
In a large bowl, combine the cooked couscous, diced red bell pepper, diced cucumber, sliced Kalamata olives, chopped fresh parsley, chopped fresh mint, lemon juice, extra virgin olive oil, salt, and pepper.
Toss the ingredients together until well combined.
Serve the baked lemon herb salmon alongside the Mediterranean couscous for a satisfying and wholesome dinner.
