For the baked salmon:
2 salmon fillets
2 tablespoons of lemon juice
2 tablespoons of extra virgin olive oil
2 cloves of garlic, minced
1 teaspoon of dried dill
Salt and pepper to taste
For the roasted vegetables:
2 cups of mixed vegetables (such as broccoli florets, bell peppers, and cherry tomatoes)
1 tablespoon of extra virgin olive oil
1 teaspoon of dried Italian seasoning
Salt and pepper to taste
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
In a small bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, dried dill, salt, and pepper.
Pour the marinade over the salmon fillets, making sure they are evenly coated.
Bake the salmon in the preheated oven for about 12-15 minutes or until cooked through and flaky.
While the salmon is baking, prepare the roasted vegetables.
Toss the mixed vegetables with extra virgin olive oil, dried Italian seasoning, salt, and pepper on a separate baking sheet.
Roast the vegetables in the oven for about 15-20 minutes or until tender and slightly browned.
Serve the baked salmon alongside the roasted vegetables for a flavorful and satisfying dinner.
