6 large eggs
1/4 cup of milk (any type you prefer)
1 cup of chopped mixed vegetables (such as bell peppers, spinach, onions, and tomatoes)
1/4 cup of crumbled feta cheese
Salt and pepper to taste
Cooking spray or olive oil for greasing
Preheat the oven to 375°F (190°C).
In a bowl, whisk the eggs and milk until well combined. Season with salt and pepper.
Heat an oven-safe skillet over medium heat and lightly grease it with cooking spray or olive oil.
Add the chopped mixed vegetables to the skillet and sauté for 3-4 minutes until slightly softened.
Pour the egg mixture over the vegetables, ensuring they are evenly distributed.
Sprinkle the crumbled feta cheese on top.
Cook the frittata on the stovetop for about 3-4 minutes until the edges start to set.
Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the frittata is set and slightly golden.
Remove from the oven, let it cool for a few minutes, and slice into wedges.
Serve the vegetable frittata alongside a side of fresh fruit for a well-rounded breakfast.
