For the salad:
4 cups of mixed salad greens
1 cup of cherry tomatoes, halved
1 cup of cucumber, diced
1 cup of bell peppers, sliced (use a mix of different colors)
1 cup of shredded carrots
1 cup of cooked chickpeas (canned or cooked from dried)
1/4 cup of chopped fresh parsley
1/4 cup of chopped fresh mint (optional)
For the dressing:
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
1 clove of garlic, minced
Salt and pepper to taste
In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell peppers, shredded carrots, cooked chickpeas, chopped fresh parsley, and chopped fresh mint.
In a separate small bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss gently to coat.
Allow the flavors to meld together for a few minutes before serving.
