Lentil Curry with Quinoa Recipe.


Ingredients:


For the lentil curry:

1 cup of dried green or brown lentils, rinsed and drained
1 tablespoon of coconut oil
1 onion, diced
3 cloves of garlic, minced
1 tablespoon of grated fresh ginger
1 tablespoon of curry powder
1 teaspoon of ground cumin
1 teaspoon of ground turmeric
1/2 teaspoon of ground coriander
1/4 teaspoon of cayenne pepper (optional, adjust to taste)
1 can (14 ounces) of diced tomatoes
1 can (14 ounces) of coconut milk
Salt and pepper to taste
Fresh cilantro for garnish

For the quinoa:

1 cup of quinoa
2 cups of water or vegetable broth
Salt to taste


Recipe Instructions:


In a large pot, heat the coconut oil over medium heat.
Add the diced onion and sauté until translucent.
Stir in the minced garlic, grated ginger, curry powder, ground cumin, ground turmeric, ground coriander, and cayenne pepper (if using).
Cook for about 1-2 minutes, until fragrant.
Add the rinsed lentils, diced tomatoes, and coconut milk to the pot.
Stir well to combine, then bring the mixture to a boil.
Reduce the heat to low, cover the pot, and simmer for about 25-30 minutes, or until the lentils are tender.
While the lentils are cooking, rinse the quinoa under cold water to remove any bitterness.
In a separate saucepan, bring the water or vegetable broth to a boil.
Add the rinsed quinoa and salt, then reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the quinoa is fluffy and the water is absorbed.
Once the lentils are cooked, season with salt and pepper to taste.
Serve the lentil curry over a bed of cooked quinoa.
Garnish with fresh cilantro for added flavor and freshness.
