Baked Lemon Herb Chicken with Roasted Vegetables Recipe.


Ingredients:


4 boneless, skinless chicken breasts
Juice of 2 lemons
3 tablespoons of olive oil, divided
2 cloves of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of dried thyme
Salt and pepper to taste
2 cups of mixed vegetables (such as broccoli, cauliflower, and Brussels sprouts), cut into bite-sized pieces
Fresh herbs for garnish (such as rosemary or parsley)


Recipe Instructions:


Preheat the oven to 375°F (190°C).
In a small bowl, combine the lemon juice, 2 tablespoons of olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
Place the chicken breasts in a baking dish and pour the lemon herb marinade over them, making sure they are well coated.
Let the chicken marinate for at least 30 minutes, allowing the flavors to infuse.
In a separate baking dish, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, salt, and pepper.
Place both the chicken and the vegetables in the preheated oven.
Bake for approximately 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
Garnish with fresh herbs before serving.
