1 cup of cooked quinoa
8 ounces of cooked shrimp, peeled and deveined
1 cup of cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/4 cup of red onion, thinly sliced
1/4 cup of Kalamata olives, pitted and halved
2 tablespoons of fresh lemon juice
2 tablespoons of extra virgin olive oil
1 tablespoon of chopped fresh parsley
Salt and pepper to taste
In a large bowl, combine the cooked quinoa, cooked shrimp, cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.
In a separate small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to create the dressing.
Drizzle the dressing over the salad and toss gently to coat.
Sprinkle chopped fresh parsley on top for added freshness.
Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
