For the grilled halibut:
2 halibut fillets
1 tablespoon of olive oil
Salt and pepper to taste
For the lemon-herb sauce:
1/4 cup of Greek yogurt
Juice of 1 lemon
1 tablespoon of chopped fresh dill
1 tablespoon of chopped fresh parsley
Salt and pepper to taste
For the roasted asparagus:
1 bunch of asparagus, trimmed
1 tablespoon of olive oil
Salt and pepper to taste
Preheat the grill to medium-high heat.
Drizzle olive oil over the halibut fillets and season with salt and pepper.
Grill the halibut fillets for approximately 4-5 minutes per side, or until cooked through.
In a small bowl, whisk together the Greek yogurt, lemon juice, chopped fresh dill, chopped fresh parsley, salt, and pepper to create the lemon-herb sauce.
In a separate baking dish, toss the trimmed asparagus with olive oil, salt, and pepper.
Place the asparagus in the oven and roast at 425°F (220°C) for approximately 12-15 minutes, or until tender and slightly charred.
Serve the grilled halibut with a dollop of lemon-herb sauce and a side of roasted asparagus.
