Nori seaweed sheets
1 cucumber, julienned
1 carrot, julienned
1 bell pepper, thinly sliced
1 avocado, sliced
Fresh herbs (such as cilantro or basil)
Optional dipping sauce: tamari or nama shoyu (raw soy sauce), or a raw almond butter dipping sauce
Place a sheet of nori seaweed on a clean surface.
Arrange the julienned cucumber, carrot, bell pepper, avocado slices, and fresh herbs on one end of the nori sheet.
Carefully roll the nori sheet, starting from the vegetable end, until it forms a tight cylinder.
Use a sharp knife to slice the roll into bite-sized pieces.
Repeat the process with the remaining ingredients.
Serve the rainbow veggie nori rolls with your preferred dipping sauce.
