3-4 zucchini, spiralized into noodles
2 cups of cherry tomatoes
1/2 cup of sun-dried tomatoes (soaked in water until soft)
1/4 cup of fresh basil leaves
2 cloves of garlic
1 tablespoon of extra virgin olive oil
Salt and pepper to taste
Optional toppings: chopped fresh herbs, pine nuts, or nutritional yeast
In a high-speed blender, combine the cherry tomatoes, soaked sun-dried tomatoes, basil leaves, garlic cloves, extra virgin olive oil, salt, and pepper.
Blend until smooth and well combined, adjusting the seasonings to taste.
Place the zucchini noodles in a large bowl and pour the raw marinara sauce over them.
Toss gently to coat the noodles with the sauce.
Let the noodles marinate for about 10 minutes to allow the flavors to meld together.
Serve the zucchini noodles with optional toppings such as chopped fresh herbs, pine nuts, or nutritional yeast.
