8 ounces of lean steak (such as sirloin or flank steak)
1 medium sweet potato, diced
2 cups of mixed greens (such as spinach, kale, or arugula)
1/4 cup of cherry tomatoes, halved
1/4 cup of diced cucumber
1/4 cup of diced red onion
1/4 cup of sliced avocado
2 tablespoons of balsamic vinaigrette dressing
Salt and pepper to taste
Preheat the grill or stovetop pan over medium-high heat.
Season the steak with salt and pepper.
Cook the steak for about 4-6 minutes per side, or until desired doneness.
Remove the steak from the heat and let it rest for a few minutes before slicing it thinly against the grain.
While the steak is resting, steam or bake the diced sweet potato until tender.
In a bowl, assemble the mixed greens, cherry tomatoes, cucumber, red onion, and sliced avocado.
Add the cooked sweet potato and sliced steak on top of the salad.
Drizzle the balsamic vinaigrette dressing over the bowl.
Toss gently to combine all the ingredients.
