1 can (15 ounces) of chickpeas, drained and rinsed
1/2 cup of diced cucumbers
1/2 cup of diced tomatoes
1/4 cup of diced red onions
1/4 cup of chopped fresh parsley
2 tablespoons of lemon juice
1 tablespoon of extra virgin olive oil
Salt and pepper to taste
In a large bowl, combine the chickpeas, cucumbers, tomatoes, red onions, and parsley.
In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Pour the dressing over the chickpea mixture and toss gently to coat all the ingredients.
Allow the salad to sit for a few minutes to let the flavors meld together.
