1 package (14 ounces) of firm tofu, drained and cubed
2 cups of mixed stir-fry vegetables (such as bell peppers, broccoli, carrots, snap peas)
1/4 cup of low-sodium soy sauce
2 tablespoons of hoisin sauce
1 tablespoon of sesame oil
2 cloves of garlic, minced
1 teaspoon of grated ginger
Optional toppings: sliced green onions, sesame seeds
Heat sesame oil in a large skillet or wok over medium-high heat.
Add the minced garlic and grated ginger, sautéing for about a minute until fragrant.
Add the tofu cubes to the skillet and cook until lightly browned on all sides.
Add the stir-fry vegetables and continue to cook for a few minutes until they are tender-crisp.
In a small bowl, whisk together the soy sauce and hoisin sauce.
Pour the sauce mixture over the tofu and vegetables, tossing to coat evenly.
Continue to cook for an additional minute until the sauce thickens slightly.
Remove from heat and garnish with optional toppings such as sliced green onions or sesame seeds.
Serve the veggie stir-fry with tofu over a bed of brown rice or quinoa.
