1/2 cup of quinoa
1 cup of water
1 cup of unsweetened almond milk (or any plant-based milk)
1 tablespoon of pure maple syrup (optional)
1/2 teaspoon of ground cinnamon
Toppings: fresh berries, sliced banana, chopped nuts
Rinse the quinoa thoroughly under running water.
In a saucepan, bring the water to a boil.
Add the rinsed quinoa and reduce the heat to low.
Simmer covered for about 15-20 minutes or until the quinoa is cooked and the water is absorbed.
Stir in the almond milk, maple syrup (if desired), and ground cinnamon.
Cook for an additional 5 minutes, stirring occasionally.
Remove from heat and let it sit for a couple of minutes to thicken.
Serve the warm quinoa porridge in a bowl and top it with fresh berries, sliced banana, and chopped nuts.
