1 large sweet potato, peeled and diced
2 tablespoons of cooking fat (ghee, avocado oil, or coconut oil)
1/2 pound of sausage, sliced
1 bell pepper, diced
1/2 red onion, diced
2 cloves of garlic, minced
Salt and pepper to taste
Optional toppings: avocado slices, fresh herbs
Heat a large skillet over medium heat and add the cooking fat.
Add the diced sweet potato and cook until they are slightly tender, stirring occasionally.
Push the sweet potatoes to one side of the skillet and add the sliced sausage to the other side.
Cook the sausage until browned and fully cooked.
Add the bell pepper, red onion, and minced garlic to the skillet.
Sauté the vegetables until they are tender and fragrant.
Season the skillet with salt and pepper to taste.
Remove from heat and serve the sweet potato and sausage breakfast skillet.
Top with avocado slices and fresh herbs if desired.
