2 boneless, skinless chicken breasts
2 tablespoons of coconut aminos
1 tablespoon of extra virgin olive oil
1 tablespoon of lime juice
1 teaspoon of minced garlic
Salt and pepper to taste
Large lettuce leaves (such as butter lettuce or romaine)
Assorted fillings: sliced cucumbers, shredded carrots, sliced bell peppers, chopped cilantro
Preheat a grill or grill pan over medium-high heat.
In a bowl, whisk together the coconut aminos, olive oil, lime juice, minced garlic, salt, and pepper to create the marinade.
Add the chicken breasts to the marinade and let them marinate for at least 15 minutes.
Grill the chicken breasts for about 6-8 minutes on each side, or until cooked through.
Remove the chicken from the grill and let it rest for a few minutes.
Slice the chicken into thin strips.
Assemble the lettuce wraps by placing the sliced chicken and assorted fillings on the lettuce leaves.
Drizzle with additional lime juice and garnish with fresh cilantro.
Roll up the lettuce wraps and secure them with toothpicks if needed.
