1/2 cup of oat bran
2 eggs
1/4 cup of skim milk or unsweetened almond milk
1 teaspoon of baking powder
1/2 teaspoon of vanilla extract
1/4 teaspoon of cinnamon (optional)
Sweetener of choice (such as stevia) to taste
Toppings: Greek yogurt, fresh berries, and a sprinkle of cinnamon
In a bowl, whisk together the oat bran, eggs, milk, baking powder, vanilla extract, cinnamon (if using), and sweetener.
Let the batter rest for a few minutes to allow the oat bran to absorb the liquid.
Heat a non-stick pan or griddle over medium heat.
Pour 1/4 cup of batter onto the pan and spread it into a round shape.
Cook for about 2-3 minutes on each side, or until golden brown.
Repeat with the remaining batter.
Serve the oat bran pancakes with a dollop of Greek yogurt, fresh berries, and a sprinkle of cinnamon.
