2 cod fillets (6 ounces each)
Juice of 1 lemon
2 tablespoons of extra virgin olive oil, divided
Salt and pepper to taste
Assorted roasted vegetables (such as bell peppers, zucchini, and eggplant)
Preheat the oven to 400°F (200°C).
Place the cod fillets in a baking dish.
Drizzle the cod with lemon juice and 1 tablespoon of olive oil.
Season with salt and pepper to taste.
Bake the cod for about 12-15 minutes, or until cooked through and flaky.
While the cod is baking, prepare the roasted vegetables.
Toss the assorted vegetables with the remaining tablespoon of olive oil, salt, and pepper.
Spread the vegetables on a baking sheet lined with parchment paper.
Place the vegetable baking sheet in the oven and roast for about 20 minutes, or until the vegetables are tender and lightly browned.
Remove the cod and roasted vegetables from the oven.
Serve the baked cod with a side of roasted vegetables
