Roasted Salmon with Root Vegetables Recipe.


Ingredients:


2 salmon fillets (6 ounces each)
2 tablespoons of fresh dill, chopped
Juice of 1 lemon
2 tablespoons of extra virgin olive oil, divided
Salt and pepper to taste
Assorted root vegetables (such as carrots, parsnips, and potatoes), peeled and chopped
1 tablespoon of honey (optional)


Recipe Instructions:


Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
Sprinkle the chopped dill over the salmon.
Drizzle the lemon juice and 1 tablespoon of extra virgin olive oil over the salmon.
Season with salt and pepper to taste.
In a separate bowl, toss the chopped root vegetables with the remaining tablespoon of olive oil, salt, and pepper.
Arrange the root vegetables around the salmon on the baking sheet.
If desired, drizzle the root vegetables with honey for a touch of sweetness.
Roast in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and the vegetables are tender and golden.
