1 pound beef roast (such as chuck or sirloin)
1 tablespoon vegetable oil
1 onion, sliced
2 cloves garlic, minced
1 cup beef broth
1 teaspoon Worcestershire sauce
Salt and pepper to taste
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Season the beef roast with salt and pepper. Heat the vegetable oil in a skillet over medium-high heat and sear the roast on all sides until browned. Remove the roast from the skillet and set it aside.
In the same skillet, sauté the onion and garlic until softened and fragrant.
Return the beef roast to the skillet and add the beef broth and Worcestershire sauce. Bring to a simmer, cover, and cook for about 2-3 hours or until the beef is tender and easily shreds.
Using two forks, shred the beef in the skillet, allowing it to soak up the flavorful juices.
Slice the French bread or baguette lengthwise and spread mayonnaise on both sides. Layer the shredded beef onto the bread and dress with lettuce, tomatoes, and pickles.
Cut the po'boy into individual servings and enjoy the succulent flavors of the classic roast beef po'boy.
