1 pound shrimp, peeled and deveined
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
Vegetable oil for frying
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Remoulade sauce for spreading
In a shallow bowl, combine the flour, paprika, garlic powder, cayenne pepper, salt, and pepper. Mix well.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Dredge the shrimp in the flour mixture, shaking off any excess.
Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on a paper towel-lined plate.
Slice the French bread or baguette lengthwise and spread remoulade sauce on both sides. Layer the fried shrimp onto the bread and dress with lettuce, tomatoes, and pickles.
Cut the po'boy into individual servings and relish the delightful flavors of the classic shrimp po'boy.
