1 pound catfish fillets
1 cup cornmeal
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon Cajun seasoning
Salt and pepper to taste
Vegetable oil for frying
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Remoulade sauce for spreading
Rinse the catfish fillets and pat them dry with a paper towel.
In a shallow bowl, combine the cornmeal, flour, paprika, garlic powder, Cajun seasoning, salt, and pepper. Mix well.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Dredge the catfish fillets in the cornmeal mixture, ensuring they are evenly coated.
Fry the catfish fillets in batches until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on a paper towel-lined plate.
Slice the French bread or baguette lengthwise and spread remoulade sauce on both sides. Layer the fried catfish onto the bread and dress with lettuce, tomatoes, and pickles.
