1 pound pork shoulder or butt
1 cup BBQ sauce (homemade or store-bought)
1 tablespoon brown sugar
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
French bread or baguette
Coleslaw for topping
Season the pork shoulder or butt with salt, pepper, paprika, and garlic powder. Place it in a slow cooker or Dutch oven.
In a bowl, mix together the BBQ sauce and brown sugar. Pour the mixture over the pork, ensuring it is well coated.
Cook the pork on low heat for 8-10 hours in the slow cooker or 3-4 hours in a covered Dutch oven, until it is tender and easily shreds.
Once cooked, shred the pork using two forks, allowing it to soak up the flavorful sauce.
Slice the French bread or baguette lengthwise and spread BBQ sauce on both sides. Layer the pulled pork onto the bread and top with coleslaw.
Cut the po'boy into individual servings and enjoy the unique combination of smoky pulled pork and tangy BBQ sauce.
