1 pound turkey breast, sliced
1 tablespoon Cajun seasoning
2 tablespoons olive oil
1 onion, sliced
1 bell pepper, sliced
Salt and pepper to taste
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Spicy mayo or creole mustard for spreading
Rub the turkey breast slices with Cajun seasoning, ensuring they are well coated.
Heat the olive oil in a skillet over medium heat. Sauté the onion and bell pepper until they are softened and slightly caramelized. Season with salt and pepper to taste. Remove from the skillet and set aside.
In the same skillet, cook the turkey breast slices until they are cooked through and nicely browned, about 3-4 minutes per side.
Slice the French bread or baguette lengthwise and spread spicy mayo or creole mustard on both sides. Layer the cooked turkey onto the bread and top with the sautéed onion and bell pepper.
Dress the po'boy with lettuce, tomatoes, and pickles.
