Smoked Sausage Po'Boy Recipe.


Ingredients:


1 pound smoked sausage (such as andouille or kielbasa)
1 onion, sliced
1 bell pepper, sliced
2 tablespoons olive oil
Salt and pepper to taste
French bread or baguette
Mustard or mayo for spreading


Recipe Instructions:


Slice the smoked sausage into diagonal pieces.
Heat the olive oil in a skillet over medium heat. Sauté the onion and bell pepper until they are softened and slightly caramelized. Season with salt and pepper to taste. Remove from the skillet and set aside.
In the same skillet, cook the sliced sausage until it is heated through and nicely browned, about 3-4 minutes.
Slice the French bread or baguette lengthwise and spread mustard or mayo on both sides. Layer the cooked sausage onto the bread and top with the sautéed onion and bell pepper.
