1 large eggplant, sliced into rounds
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Vegetable oil for frying
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Spicy mayo or avocado spread for spreading
In a shallow bowl, combine the flour, paprika, garlic powder, salt, and pepper. Mix well.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Dredge the eggplant slices in the flour mixture, ensuring they are evenly coated.
Fry the eggplant slices in batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on a paper towel-lined plate.
Slice the French bread or baguette lengthwise and spread spicy mayo or avocado spread on both sides. Layer the fried eggplant onto the bread and dress with lettuce, tomatoes, and pickles.
