Cochon de Lait Po'Boy Recipe.


Ingredients:


1 pound pork shoulder or butt
1 tablespoon olive oil
1 onion, sliced
2 cloves garlic, minced
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and pepper to taste
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Creole mustard for spreading


Recipe Instructions:


Season the pork shoulder or butt with salt, pepper, thyme, and smoked paprika.
Heat the olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned. Remove the pork from the skillet and set it aside.
In the same skillet, sauté the onion and garlic until softened and fragrant.
Return the pork to the skillet and add the chicken broth. Bring to a simmer, cover, and cook for about 2-3 hours or until the pork is tender and easily shreds.
Shred the pork using two forks, allowing it to soak up the flavorful juices.
Slice the French bread or baguette lengthwise and spread Creole mustard on both sides. Layer the shredded pork onto the bread and dress with lettuce, tomatoes, and pickles.
