4 soft-shell crabs, cleaned and patted dry
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Vegetable oil for frying
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Spicy remoulade sauce for spreading
Place the cleaned and dried soft-shell crabs in a shallow dish and pour the buttermilk over them. Let them soak for about 15 minutes.
In a shallow bowl, combine the flour, paprika, garlic powder, salt, and pepper. Mix well.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Remove the crabs from the buttermilk, allowing any excess to drip off. Dredge them in the flour mixture, ensuring they are evenly coated.
Fry the soft-shell crabs in batches until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on a paper towel-lined plate.
Slice the French bread or baguette lengthwise and spread spicy remoulade sauce on both sides. Layer the fried soft-shell crabs onto the bread and dress with lettuce, tomatoes, and pickles.
