1 pound alligator sausage links
2 tablespoons olive oil
1 onion, sliced
1 bell pepper, sliced
Salt and pepper to taste
French bread or baguette
Lettuce, tomatoes, and pickles for dressing
Spicy mustard for spreading
Heat the olive oil in a skillet over medium heat. Cook the alligator sausage links until they are heated through and nicely browned, about 3-4 minutes per side.
Remove the sausage from the skillet and let it rest for a few minutes. Slice the sausage into diagonal pieces.
In the same skillet, sauté the onion and bell pepper until they are softened and slightly caramelized. Season with salt and pepper to taste. Remove from the skillet and set aside.
Slice the French bread or baguette lengthwise and spread spicy mustard on both sides. Layer the sliced alligator sausage onto the bread and top with the sautéed onion and bell pepper.
Dress the po'boy with lettuce, tomatoes, and pickles.
