1 can of ackee (drained and rinsed)
8 oz salted codfish
1 onion (chopped)
1 tomato (chopped)
1 bell pepper (chopped)
2 cloves of garlic (minced)
2 tablespoons cooking oil
1/4 teaspoon black pepper
Scotch bonnet pepper (optional for heat)
Fresh thyme (optional)
Salt to taste
Soak the salted codfish in water overnight, changing the water at least twice to remove excess salt.
Drain the codfish and flake it into small pieces.
Heat the oil in a skillet over medium heat and sauté the onion, garlic, and bell pepper until softened.
Add the codfish to the skillet and cook for about 5 minutes, stirring occasionally.
Add the ackee, tomato, black pepper, thyme, and Scotch bonnet pepper (if using) to the skillet. Gently stir to combine all the ingredients.
Reduce the heat to low, cover the skillet, and let it simmer for about 10 minutes.
Taste and adjust the seasoning with salt if necessary.
Serve hot with boiled green bananas, yam, or dumplings.
