2 pounds chicken pieces (legs, thighs, or breasts)
1/4 cup soy sauce
1/4 cup lime juice
3 tablespoons olive oil
2 tablespoons brown sugar
2 tablespoons jerk seasoning
4 cloves garlic (minced)
2 teaspoons fresh thyme leaves
1 teaspoon ground allspice
1 teaspoon paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Salt and black pepper to taste
In a bowl, combine all the ingredients except the chicken. Stir well to make a marinade.
Place the chicken pieces in a ziplock bag or a shallow dish. Pour the marinade over the chicken and coat each piece evenly. Refrigerate for at least 4 hours or overnight for the best flavor.
Preheat your grill to medium-high heat or preheat your oven to 375°F (190°C).
If grilling, oil the grill grates to prevent sticking. If using the oven, line a baking sheet with parchment paper.
Grill or bake the chicken for about 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove from heat and let it rest for a few minutes before serving.
Serve hot with rice and peas or traditional Jamaican festival bread.
